On a Saturday at noon in West Acton, the line has often run out the front door of Eve & Murray's. The Acton Exchange reported that line in September. It forms for sourdough baked by one man who started in his basement in the spring of 2025. A mile or two away, a husband-and-wife team bakes naturally leavened loaves out of a 1769 colonial on Main Street. They sell them in limited weekly drops that you reserve online.
Neither bakery keeps regular counter hours. Each runs on an order window, a pickup slot, a pop-up or a market table. Most weeks that makes Acton's best bread hard to plan around. The week before Thanksgiving is the exception. On Saturday, November 21 and Sunday, November 22, both bakeries' schedules and the season's first indoor farmers market all line up. Two of those three meet at the same West Acton address.
Two bakeries that sell on a schedule
Bethencourt Bakehouse belongs to Gonzalo Bethencourt. He bakes European-style sourdough "crafted with organic, freshly milled flours, long fermentations, and traditional techniques," as he described it to the Acton Exchange. He started with a classic loaf. Since then he has added Cheese and Jalapeno, Figs and Red Wine, and Everything Bagel sourdoughs, along with Belgian triple chocolate sourdough cookies, herb focaccia, and cranberry muffins made with fruit he drives to Massachusetts bogs to collect. The same article said he had done all of this without employees. He started at farmers markets, moved to the Saturday pop-ups at Eve & Murray's, and then added Debra's Natural Gourmet in West Concord and the Concord Cheese Shop.
The bakery's ordering page explains how the week works. Preorders open Monday morning on Hotplate and close Tuesday night, so the slow fermentation can start. Pickup is Thursday from 1:30 to 5 p.m. at Eve & Murray's. The same page lists bread deliveries to Eve & Murray's on Tuesdays and Thursdays, the Saturday noon pop-up there, and the Classic Sourdough at Cucurbit Farm on Parker Street on Fridays.
Harris Hearth bakes at 750 Main Street. Its loaves start with locally grown regenerative organic wheat, which the bakers mill fresh and ferment for 24 hours or more, with no commercial yeast. Its listing on the Acton-Boxborough Farmers Market site gives the reason for the limited drops in the bakers' own words:
"We bake in limited weekly drops, making only what the process allows, because craft can't be rushed."
Weekly bread is sold through the bakery's Hotplate page, where each new drop is posted.
The two bakeries' timing differs in a way that matters for the holiday. Bethencourt's cycle is a few days long, from Monday order to Thursday loaf. Harris Hearth's holiday panettone is on a calendar that runs to New Year's Eve.
Five panettone releases, and the first is November 21
The holiday ordering page on the Harris Hearth site lists eight panettone flavors across five releases, with dates given by month and day. Each release ships or is ready for local pickup on its own date. Listed prices start at $25 or $30 depending on flavor, with three sizes ranging from a two-pack of 150-gram panettini to an 800-gram Grande Basso.
| Release | Flavors | Listed starting price |
|---|---|---|
| Week 1, 11/21 | Classico; Cranberry, Orange & White Chocolate | $25 each |
| Week 2, 12/5 | Candied Lemon & Dark Chocolate; Nocturnum; Candied Pear & Dark Chocolate | $25, $25, $30 |
| Week 3, 12/12 | Candied Apricot, Orange & Gianduia; Classico; Pistachio, Amarena & White Chocolate | $30, $25, $30 |
| Week 4, 12/19 | Classico; Nocturnum; Candied Pear & Dark Chocolate | $25, $25, $30 |
| Week 5, 12/30-31 | Espresso & Dark Chocolate; Pistachio, Amarena & White Chocolate | $30 each |
The 11/21 release lands the weekend before Thanksgiving, and Cranberry, Orange & White Chocolate appears in no other week on the list. The bakers' note on the ABFM site ties this season's panettone to the November 22 market, so the 11/21 drop falls the day before it. The bakery says its panettone keeps about four weeks without freezing. A loaf picked up on November 21 will therefore last through Thanksgiving and well into December. One checkout covers as many releases as you want. Local pickup is at the bakery's Bread Shed in Acton or at Kitchen Outfitters, and times are given during ordering.
How the week before Thanksgiving lines up
Thanksgiving is Thursday, November 26, the same day as Bethencourt's usual Thursday pickup. That makes the cycle a week earlier the practical one for holiday bread. Here is how the standing schedules fall in the days ahead:
- Monday, November 16, through Tuesday night, November 17. Bethencourt's Hotplate preorder window, going by its posted weekly cycle.
- Thursday, November 19, 1:30 to 5 p.m. Bethencourt preorder pickup at Eve & Murray's, 525 Massachusetts Avenue.
- Friday, November 20. Bethencourt's Classic Sourdough is listed for Fridays at Cucurbit Farm, 32 Parker Street. The farm's site says the stand is closed until November 22, with self-service still available and a fish truck there on Fridays from 2 to 6.
- Saturday, November 21. Harris Hearth's first panettone release. At noon, Bethencourt's weekly pop-up at Eve & Murray's.
- Sunday, November 22, 10 a.m. to 1 p.m. The ABFM Winter Market at The Gallery at Villageworks, 525 Massachusetts Avenue. Cucurbit Farm's stand also reopens that day, according to its site.
Eve & Murray's and The Gallery at Villageworks share the address 525 Massachusetts Avenue. Bethencourt's Saturday pop-up and Sunday's winter market happen at the same West Acton spot on back-to-back days. Eve & Murray's regular hours are Monday through Saturday 10 to 5, Friday until 6:30, and Sunday 11:30 to 4, so the shop opens about 90 minutes after the market does.
On the walk over, the West Acton Baptist Church steeple is finished. After a summer of staging, carpentry and regilding, the Acton Exchange's October 31 business briefs describe a newly painted white steeple and a powder blue dome topped by the bright gold weathervane.
Sunday at The Gallery, and who brings bread
The Villageworks event listing describes the winter market as a chance to stock up on "winter provisions, staples, and specialty foods for your celebrations." The list of goods runs from vegetables, greens, apples and eggs to beef, pork, chicken, wreaths and dog treats. ABFM describes itself as a producer-only market.
For the bread basket and the dessert table, the ABFM vendor roster for November 22 includes:
- Harris Hearth, with naturally leavened bread and a limited supply of handmade panettone. The bakers' note says the panettone is made with a living pasta madre "over days, not hours," comes in a small selection of flavors, and that you should "come early."
- Harvest and Hearth, with slow-fermented, naturally leavened bread.
- Bagel Alley, with fresh bagels.
- Ovenbird Cafe of Belmont, bringing whole pies, hand pies, cake, cookies, teacakes, brownies and biscuits.
- Wilson Confections and Lauren's Best Batch, also on the roster.
The rest of the roster covers the other parts of the meal. Farms on the list include Johnny Putt Farm, Owl Rock Farm, Ridge Hill Farm, Tifsim Farm, Small Farm, Not Your Average Farm and Grandpa and Chickens. Mei Mei Dumplings, Pinci Foods Lasagneria, Habibi Gourmet Foods, Sa's Homestyle and Amnay Foods bring prepared food. For drinks there are Del's Coffee Roasters, Dirigible Brewing Company, Blisspoint Meadery and Aaronap Cellars. Barkley's Biscuit Co. is listed too, for anyone shopping for the dog.
Bethencourt Bakehouse's ABFM profile lists regular-season market dates through October. Its bread is at 525 Massachusetts Avenue the day before the market, at the Saturday pop-up.
166 Great Road
The schedule-based setup is how Acton has bought this bread so far, and one of the two bakeries has been working to move past it. In September, WhatNow and the Acton Exchange reported that Bethencourt was taking the former Velvet Vine Café space at 166 Great Road for his first storefront.
The Acton Exchange laid out the plans. The dark walls and ceiling were to be repainted in a light color, a wood counter would replace the black quartz, and a new wall with a large glass window would let customers watch the dough being prepared. The equipment from the home microbakery would move over along with a new large oven from Spain. Every appliance would be electric, and the natural gas supply would be disconnected. The extra capacity would let him add sandwiches on his own bread, plus coffee and other drinks. At the time, Bethencourt told the paper he hoped to open by Thanksgiving. The bakery posts updates on Instagram at @BethencourtBakehouse, on its Facebook page, and through the email list on its website.
The Thanksgiving week bread run is the same this year either way. Order Bethencourt by Tuesday night, November 17. Reserve the November 21 panettone ahead or go to the Gallery early on Sunday. Pick up whatever is still on your list at the market tables before 1 p.m. on the 22nd.
I've spent many Novembers helping Acton households get their homes ready for the holidays and for whatever comes after. If a move is part of your plans for the new year, Ann Shaw Homes is glad to talk it through calmly before the season gets busy. Request a personal market consultation, and if we meet in West Acton, I'll gladly tell you where the bread is that week.
